Eat Cheap But Healthy: $8 Family of 4 – Meal 1

This is day 1 of a 5 day presentation that shows you 5 different meals that you can make for your family that will cost $8 or less! Come back tomorrow to see the next meal!

Pineapple Pork Chops with Spicy Slaw
Ingredients:
* 4 boneless pork chops
* 1 1/2 t salt, divided
* 1 1/2 t chili powder, divided
* 1/2 fresh pineapple, cored and sliced
* 3 T of cider vinegar
* 2 T of orange juice
* 2 T of olive oil
* 1 T sugar
* 1/3 head of green cabbage, cored and shredded
* 1/2 of a red onion, sliced thin
* 1 red sweet pepper, seeded and cut into thin strips
* 1/4 t pepper
How to Make It:
Sprinkle the pork chops on both sides with 1 t salt.
Sprinkle the 1 t chili powder on to the pork chops on both sides.
Preheat a gas grill to the medium heat temperature.
Place the pork chops and pineapple slices on the heated grill and cover.
Grill 8 minutes or until the internal temperature of the pork chops reaches 160 degrees, being sure to turn once during cooking.
Place the remaining chili powder into a mixing bowl.
Add the vinegar and orange juice and whisk slightly.
Pour in the olive oil.
Add the sugar and whisk until the sugar has dissolved and the ingredients are incorporated together well.
Place the cabbage, onion and sweet pepper into a large mixing bowl and toss to combine.
Pour the dressing over the vegetables and toss to coat well.
Sprinkle in the remaining 1/2 t salt and the pepper and toss again to combine.
Serve the pork chops with the pineapple over the top and the slaw on the side.
Serves: 4
Cost per serving: This is a full meal deal that can be made for approximately $1.73 per serving.
The chops can also be cooked in the broiler 4 inches from the heat source for the same period of time.
