Eat Cheap But Healthy: $8 Family of 4 – Meal 2

You CAN feed your family healthy, nutritious meals without spending a fortune for food.
This is day 2 of a 5 day presentation that shows you 5 different meals that you can make for your family that will cost $8 or less! Come back tomorrow to see the next meal!

Eggplant with Garlic Beans and Rice
Ingredients:
* 1 small eggplant sliced into 8 pieces
* 3 T of olive oil, divided
* 1 t salt
* 1 t pepper, divided
* 1/4 C seasoned bread crumbs
* 1 C instant brown rice
* 1/4 C green onion, chopped
* 1 (15 oz.) can Great northern beans, rinsed and drained
* 1 (26 oz) jar pasta sauce with roasted garlic
How to Make It:
Use 1 T of olive and brush each eggplant slice on both sides.
Sprinkle both sides with the salt and 1/2 t of pepper.
Place the bread crumbs in a small shallow bowl.
Cover the eggplant slices well with the bread crumbs.
Place the remaining oil into a skillet.
Position the skillet over medium high heat and add the eggplant.
Cook 10 minutes being sure to turn each slice often to keep it from burning around the edges.
Remove the eggplant slices to a piece of paper towel to drain.
Fix the rice according to the directions on the package.
When the rice is cooked, stir in the chopped green onions.
Place the beans into a saucepan.
Pour the pasta sauce in with the beans and stir well to combine.
Place the pan over medium heat and cook 6 minutes or until completely heated through.
Sprinkle in the remaining pepper and stir to combine.
Serve the eggplant slices with the beans and rice on the side.
Serves: 4
Cost per serving: This meal will cost approximately $1.66 per serving. At that price you can add a side salad or a cup of fruit and still remain under $2.00 per serving.
